I voted for Warmbloods, but I'm a bit biased myself. Especially if you use RL bloodlines & go for high quality!

I'd go with Warmbloods myself, not only are they my favorite breed and I breed them myself,and I've noticed that they sell pretty well on sim, if you go with RL bloodlines.If you go with Warmbloods, I'd personally suggest Holsteiners(my favorite, lol, used to own one in RL myself), or Hanoverians, or Dutch Warmbloods or Trakehners, or you could breed all of those.Selle Francais are also starting to become more popular, as well as Swedish Warmbloods.
I also really like Knabstruppers, but I don't know how well those would sell if you bred them.I wouldn't suggest something like American Warmbloods, or even Oldenburgs, because Ameriucan Warmbloods are basically cross breeds with some hot and cold blood, that someone decided to create a registry for.As it is, a lot of them are draft crosses, and as for the actual warmbloods registered there, well, most of them have mixed warmblood bloodlines, and so can't be registered with breed registrys that want purer bloodlines.
Oldenburgs are all german warmbloods, but the oldenburg registry also is the international sport horse registry, so you find mostly warmbloods besides Oldenburgs listed as approved sires, and the ones that are actually Oldenburgs mainly have Hanoverian or Thoroughbred lines as it is.
Hope I'm not confusing you lol.If you have any questions, feel free to ask.Oh, ok and I'll admit...Knabstruppers have a lot of other german warmblood blood as well.The breed started to die out, so they let Knabstruppers be bred with just about anything to keep them from becoming extinct.*grins* well, I couldn't help it....Warmbloods are my favorite topic....

oh, I guess I should add that if anyone ever has any Warmblood questions(including bloodlines) that you should feel free to ask...just be forewarned...if you ask about Cor de la Bryere, expect a long lecture..he's one of my favorite sires....
